If you love the tangy lemony chicken orzo soup at Panera Bread, you'll love my copycat recipe, Lemon Chicken Orzo Soup Panera Style. It is hearty, yet light and tasty with rich chicken flavor and bright with lemon juice and zest. Best of all, you can have it on the table in 30 minutes!
Chicken and rice are great together. They are even better when combined with lemon, garlic and oregano. Greek Chicken with Lemon Rice is a one pot wonder. You can marinate the chicken for as little as 20 minutes or as much as overnight.
Meyer Lemon Garlic Chicken made the cut for this round-up because it uses ingredients you probably have on hand. It is table ready in under an hour and the oven does most of the work. If you love garlic, this one's for you!
This recipe for Meyer Lemon Chicken Under a Brick makes the most rustic and delicious chicken. Butter, sherry, lemon, garlic, and fresh herbs add a flavor punch while the brick weighs the chicken down for perfectly crispy skin. This one is worth the trip to the hardware store for a couple of bricks if you don't have any lying around.
If you love Asian cuisine, the next 3 are for you!
If you are like me, I had you at Sticky Lemon Chicken. For this dish, I use Meyer lemons when they are available, but any lemon will work. The honey provides enough sweetness to counter the tartness of the lemon. This one does most of it's cooking in the oven and it too is on the table in under an hour. Tip: Have plenty of napkins ready!
I chose this recipe for the round-up because Sticky Lemon Marmalade Chicken is made easy with store-bought lemon marmalade. You can also use your own homemade lemon marmalade like I did, when a batch failed set up firmly. If you can't find lemon marmalade, use orange and call it Sticky Orange Chicken. Tasty served over steamed white rice, preferably Jasmine rice.
Chinese Restaurant Style Lemon Chicken got it's name from a story my son told me about his difficulty in getting lemon chicken at a local restaurant in the small desert town he lived in. I decided to create a recipe for lemon chicken that he could make it at home and share with his co-workers. The chicken is tart, a little sweet, with a bit of heat from the red pepper flakes. No groveling required. 🙂
