I took a wonderful free class, Perfect Pizza at Home, from Craftsy. The instructor, Peter Reinhart, a master bread baker teaches techniques in the class for making four different pizza crusts. The first crust I tried was the American style Neapolitan crust. The recipe makes enough dough for 4-5 pizzas. I made a wonderful white clam pizza first, then a Margherita Pizza with Pesto garnish.
This crust is great to work with. The technique Peter teaches is entirely different from what I have done in the past. It is the way I will make pizza dough from here on.
I mentioned that the class is free, right? In addition to the dough recipes and techniques are sauce recipes and toppings tips.
I used Peter’s recipe for tomato sauce and garnished with homemade pesto from the freezer. The cheese is burrata, suggested by Peter as a good change from the usual fresh mozzarella usually seen on Pizza Margherita. Burrata is fresh mozzarella surrounding a center mozzarella and cream. Delicious! If you try it, add a little bang time as it is moister than fresh mozzarella.
I still have two rounds of pizza dough in the freezer and I can’t wait to try it. I am anxious to see how it comes out after freezing. I think I will use the first one to make Stinking Rose Pizza! I’ll update after I try it.
