Crockpot Ground Beef Vegetable Soup Recipe

Equipment

  • Crock Pot or slow cooker I use my mini crock pot.

Ingredients

  • ½ pound ground beef formed into ½ inch meatballs
  • 1 medium potato
  • 6 ounces frozen mixed vegetables or peas and carrots
  • 3 cubes beef bouillon
  • 3 cups water or use 3 cups beef broth and omit bouillon
  • 7 ounces canned diced tomatoes
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Dissolve the bullion cubes in the 3 cups water. Hot water works best. Skip this step if using 3 cups beef broth instead of water and bullion.
  • Form the ground beef into ½ inch meatballs
  • Wash the potato, and cut the potato into ½ inch chunks.
  • Add the ingredients to the slow cooker, and give a quick stir.
  • Cook on high for 3 hours, or low for 6 hours.
  • Stir and serve. Enjoy!
