Fresh Apple Coffee Cake
Simple fresh apple coffee cake.
9x11 baking pan
- 2 cups sugar
- ½ cup vegetable oil
- 2 eggs lightly beaten
- 3-4 cups chopped apples
- ½ cup chopped nuts
- 2 cups self rising flour or 2 cups all-purpose flour plus 2 teaspoons baking soda
- ½ teaspoon nutmeg
- 2 teaspoons cinnamon
Preheat oven to 350 degrees. Spray a 9 x 11 baking pan with baking spray or grease with butter and lightly flour the pan.
Mix together sugar, oil and eggs in a large bowl. Whisk until smooth.
Add the flour, nutmeg, cinnamon. Stir in the apples and nuts. Mix until combined. The batter will be thick.
Spread evenly in 9 x 11 inch pan. Bake at 350°F for 1 hour or until a wooden skewer comes out clean.
