Ingredients

  • 2 cups sugar
  • ½ cup vegetable oil
  • 2 eggs lightly beaten
  • 3-4 cups chopped apples
  • ½ cup chopped nuts
  • 2 cups self rising flour or 2 cups all-purpose flour plus 2 teaspoons baking soda
  • ½ teaspoon nutmeg
  • 2 teaspoons cinnamon

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 11 baking pan with baking spray or grease with butter and lightly flour the pan.
  • Mix together sugar, oil and eggs in a large bowl. Whisk until smooth.
  • Add the flour, nutmeg, cinnamon. Stir in the apples and nuts. Mix until combined. The batter will be thick.
  • Spread evenly in 9 x 11 inch pan. Bake at 350°F for 1 hour or until a wooden skewer comes out clean.
