Cheesy Baked Chili Mac Comfort Food Casserole

Just like the stuff Mom made from the Hamburger Helper box, only better. Flavorful homemade chili with ground beef, cheese, and macaroni.

Ingredients

  • ¼ cup chopped onion
  • ½ pound lean ground beef
  • 2 teaspoons olive oil
  • 3 ounces macaroni
  • 4 ounces tomato sauce
  • cup ketchup
  • ½ cup water
  • 2 teaspoons chili powder more if you like it spicy
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup shredded Cheddar cheese
  • Sliced scallions and sour cream for garnish

Instructions

  • Preheat oven to 325 degrees.
  • Add macaroni to boiling salted water and cook to al dente' stage, then drain.
  • While macaroni is cooking, brown onion in olive oil, in a large skillet, on medium high heat until just translucent.
  • Add the ground beef and continue to cook until browned and crumbly.
  • To the ground beef mixture add tomato sauce, ketchup, water, chili powder, salt and pepper. Simmer for 5 minutes.
  • Add ½ cup shredded cheddar cheese. Continue to heat until cheese is melted.
  • Pour the macaroni and ground beef mixture into a small casserole dish. Sprinkle on the remaining ¼ cup of cheese.
  • Bake at 325 degrees until the cheese on top melts and chili mac is heated through.
  • Garnish with a dollop of sour cream and a sprinkling of finely sliced scallions.
