Combine all ingredients in a large heavy pot. Bring to a rolling boil then reduce heat to medium-low. Cook until the sauce is thick and reduced to half the original volume. The original recipe says it takes and hour. mine actually took less time and got a bit too thick. Before I served it, I added a little more pineapple juice to thin it a bit.
