This easy corn casserole recipe makes a deliciously moist casserole without using creamed corn.

Ingredients

  • ½ cup sour cream
  • 6 tablespoons all purpose flour
  • 3 tablespoons corn flour
  • 3 tablespoons sugar
  • 1 ½ cups whole kernel corn
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons butter
  • 2 eggs

Instructions

  • Preheat the oven to 350F. Mix all dry ingredients in a bowl (two types of flour, baking powder, salt, sugar).
  • In another bowl, mix sour cream, melted butter and eggs.
  • Combine dry and liquid ingredients, also add corn kernels.
  • Transfer the corn casserole mixture into a baking dish (8*8 inches).
  • Place in the oven and bake for 40 minutes or until the top of the casserole is firm enough. It may be slightly moist inside.
  • Serve warm or cooled, with fresh herbs and sour cream.
