Equipment

  • Large pot for cooking the pasta
  • Large skillet. for making the cherry tomato sauce
  • Potato Masher - for crushing the tomatoes

Ingredients

  • 8 ounces spaghetti angel hair pasta or penne
  • ¼ cup olive oil
  • 1 tablespoon balsamic vinegar
  • 4 cups cherry tomatoes
  • 3 each garlic cloves
  • Salt and black pepper to taste add red pepper flakes if you like a little heat
  • ¼ cup Parmesan cheese
  • 2 teaspoons lemon zest zest of approx 1 lemon
  • ¼ cup chopped fresh basil
  • 1 teaspoon Chives

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until a dente
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes or until fragrant
  • Add the cherry tomatoes to the skillet and cook for 5- 7 minutes, or until they start to soften and release their juices.
  • Add the vinegar and lemon zest. Season with salt and pepper.
  • Drain the cooked pasta and add it to the skillet with the tomato mixture. Toss to combine, adding a splash of pasta water if needed to loosen the sauce.
  • Add the chopped basil and parmesan cheese and toss again.
  • Serve immediately.
