Potato Masher - for crushing the tomatoes
Ingredients
8ouncesspaghetti angel hair pasta or penne
¼cupolive oil
1tablespoonbalsamic vinegar
4 cups cherry tomatoes
3each garlic cloves
Salt and black pepper to tasteadd red pepper flakes if you like a little heat
¼cup Parmesan cheese
2teaspoons lemon zestzest of approx 1 lemon
¼cupchopped fresh basil
1teaspoonChives
Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until a dente
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes or until fragrant
Add the cherry tomatoes to the skillet and cook for 5- 7 minutes, or until they start to soften and release their juices.
Add the vinegar and lemon zest. Season with salt and pepper.
Drain the cooked pasta and add it to the skillet with the tomato mixture. Toss to combine, adding a splash of pasta water if needed to loosen the sauce.
Add the chopped basil and parmesan cheese and toss again.
