Substitutions
You can use baby Yukon golds or small russet potatoes instead of red potatoes, just keep the pieces similar in size.
Dried rosemary can replace fresh, use about ½ teaspoon.
Avocado oil, light olive oil, or melted butter can stand in for extra virgin olive oil.
Garlic salt can be used instead of garlic powder and kosher salt, just reduce or skip the added salt.
Variations
Thinking about making this recipe your own? Here are some suggestions.
For a lemon-herb version, add a little lemon zest at the end.
Toss in paprika or smoked paprika for a warm, savory twist.
Add grated parmesan right after cooking so it melts onto the hot potatoes.
For a spicy version, sprinkle with cayenne or chili flakes before air frying.
STORAGE
Let leftovers cool completely, then store in an airtight container in the fridge for up to 4 days. Reheat in the air fryer at 375°F for 4 to 6 minutes until hot and crisp again. Avoid the microwave if you want to keep them from turning soft.
Top tip
After you toss the potatoes with oil and seasoning, let them sit for 5 minutes before air frying. That short rest gives the salt time to pull a little moisture to the surface, which helps the outsides brown faster and crisp up better in the air fryer.
