A FEW INGREDIENT NOTES
Tomatoes
Obviously, fresh tomatoes are the star of the show. Ripe tomatoes like Campari tomatoes, Roma tomatoes, plum tomatoes, and grape tomatoes, work best. Air fryer cherry tomatoes are perfect for use in Bruschetta recipes.
Heirloom tomatoes can be used, but pick them carefully because they are often overripe when they arrive at the grocery store. Buy heirloom tomatoes at farmer's markets, or better yet, plant your own! Heirloom tomatoes are usually larger tomatoes, so cut them into smaller wedges or tomato slices.
Air-fried green tomatoes are an easy way and great alternative to breaded deep-fried green tomatoes.
Fresh Herbs
This is where you can improvise and use dried herbs in place of fresh herbs. I love to add fresh herbs such as oregano and fresh basil.
Dried Herbs
I used oregano and thyme but you can use Italian seasoning or anything that goes well with what you are serving.
Salt
Kosher salt is my favorite, but any kind of coarser salt works well. I have sprinkled Maldon Sea Salt Flakes over the roasted tomatoes. Delicious!
Olive oil
I prefer extra virgin olive oil, but avocado oil is also great too.
Garlic
I used granulated garlic in this recipe but garlic powder, grated garlic, or finely minced garlic works well too. Lately, I am obsessed with the frozen garlic in individual clove-sized pieces sold at Trader Joe's. It is a game-changer when rushing to get dinner on the table.
HOW TO MAKE AIR FRYER TOMATOES
Wash and pat the tomatoes dry, then slice each into four slices (lengthwise).
In a medium bowl, add the sliced tomatoes, and all the other ingredients. Stir to combine.
Arrange them in the air fryer basket in a single layer skin side down.
Fry at 400°F for 10 minutes, check on them around the 8-minute mark.
TIPS FOR SUCCESS
Choose juicy tomatoes for the best results. Season your tomatoes well, especially with salt and pepper, for the brightest flavor after air frying. Using air fryer tomatoes in your recipes, instead of sundried tomatoes takes the dish to a whole new level.
MARY'S TWO CENTS
This recipe falls into our cheap category! If you grow your own tomatoes and have a well stocked spice cabinet you can make it for almost nothing!
FAQ'S
Air-fried tomatoes can be used in recipes calling for sun-dried tomatoes. If you are looking for a very dry version of sundried tomatoes, increase the cooking time by 3-5 minutes.
Use in pasta dishes for a bright acidic component.
They make a great addition to pasta salads and pasta sauce.
Serve them alone as the perfect side dish. This is an excellent place to sprinkle them with fresh herbs and Maldon Sea Salt Flakes before serving.
These air-fried tomatoes work great in my Easy One Pot Marry Me Chicken Casserole Recipe as a replacement for the sundried tomatoes.
EQUIPMENT
Air fryer - I use the mini Power XL air fryer and I love it. This is the perfect size for those of us who cook for two.
STORING AIR-DRIED TOMATOES
Air-fried tomatoes should always be stored in an airtight container for 2-3 days in the refrigerator.

This is such a clever and delicious recipe. I would not have thought to use my air-fryer for tomatoes. The tomatoes turned out great (thanks to your instructions). I often throw out tomatoes I don't think I will use for salads, etc.... so this is a great way to not waste my produce.
