- Use ½ lb ground beef or extra lean ground beef.
- In a pinch, you could use tomato sauce if you don't have diced tomatoes. The flavor will be a bit different.
- Frozen vegetables are the easiest but fresh vegetables are just fine.
- Fresh green beans would work well. I would also add a bay leaf and a little Italian seasoning if using green beans.
- If you like bell peppers, use them. Add a little garlic or onion powder.
- Exchange the potato for a sweet potato.
- Sprinkle fresh parsley over the soup when serving for a little fresh element.
Step-by-Step Instructions
Form the meat into half-inch meatballs.
Dice the potato. No peeling necessary.

This should be eaten within one day of cooking. Store in the refrigerator or in the freezer in a freezer-safe container. I really like the zipper bags that stand so that you can fill them easily, then flatten them out in the freezer. They take up very little freezer space this way.
Expert Tips
The best tip for slow cooker soups is to have everything cut to similar sizes. If you have large carrots and small potatoes, the carrots will not be done at the same time. I generally cut my potatoes a little larger for the slow cooker because they tend to disintegrate over long cooking times. Onions dissolve in the slow cooker as well. I like the whole frozen pearl onions, dropped in about an hour from the finish time. They have time to cook but don't fall apart.

Ingredients
- ½ pound ground beef formed into ½ inch meatballs
- 1 medium potato
- 6 ounces frozen mixed vegetables or peas and carrots
- 3 cubes beef bouillon
- 3 cups water or use 3 cups beef broth and omit bouillon
- 7 ounces canned diced tomatoes
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Dissolve the bullion cubes in the 3 cups water. Hot water works best. Skip this step if using 3 cups beef broth instead of water and bullion.
- Form the ground beef into ½ inch meatballs
- Wash the potato, and cut the potato into ½ inch chunks.
- Add the ingredients to the slow cooker, and give a quick stir.
- Cook on high for 3 hours, or low for 6 hours.
- Stir and serve. Enjoy!
