Crumble the cooked salmon into ½″ pieces. Leave some nice sized chunks. Set aside.
Heat oil in frying pan on medium heat. Add diced onion and cook until just translucent but not brown. Leave them a bit crunchy. Drain onions.
Add the cooked onions, dry bread crumbs, herbs, egg and spices to the salmon.
Toss just enough to incorporate ingredients.
Add oil to frying pan or grill pan and heat on medium. Shape patties. Fry patties in hot oil until golden brown on both sides and heated through. Makes four to five patties depending on size.
Serve immediately with a side of tartar sauce.
